It was in 1950, at a home show, where Richard K. Ransom, the founder of Hickory Farms®, first got a taste of what people wanted in terms of specialty foods. He was selling cheese at the show…hand cut, hand wrapped and sold while the cheese still carried rich full-bodied flavour and fresh, mouth-watering aroma.

It was like going back in time, when old-fashioned grocery stored hosted 40 - 200 pound "wheels" of cheese. The cheese's fragrance would permeate the air, and the customer would get a small sampling before they made their purchases. Things were easy going then, and simpler. And that's the flavour, of a time gone by, that Mr. Ransom wanted to capture.
